Recipe of the Day- Mediterranean Frittata

Mediterranean Frittata

Set oven to Broil

2 Tbsp                              Half N’ Half

2 tsp                                 Chopped Thyme

1/2 tsp                              Kosher Salt

1/2 tsp                              Fresh Cracked Black Pepper

8 Lg                                   Eggs

2 tsp                                 Olive Oil

1/2 Cup                            Thinly Sliced Shallots

1/2 Cup                            Asiago Cheese Grated

1 Sm Pkg                         Spinach (if frozen squeeze out liquid)

1 Cup                                Grape Tomatoes Halved

1/2 Cup                            Feta Cheese Crumbled

Dash                                Nutmeg

Combine first 5 ingredients in a large bowl and whisk.  Heat a medium oven safe skillet over medium heat.  Add oil to pan and swirl to coat.  Add shallots sauté 3 minutes or until translucent.  Add egg mixture to pan; Add remaining ingredients and fold into egg mixture….cook 5 minutes or until eggs are partially set.  Cover and let steam cook until eggs are set (appx. 3 min). Remove lid top with additional Asiago Cheese if desired (1/2 Cup) broil until cheese is melted and brown (appx. 3 minutes).  Cut in to 8 slices and serve with toast or rolls.
