Chicken Cordon Bleu Grilled Cheese Sandwiches
2 tsp. Olive Oil
8 Slices Multigrain Country Bread
1 Cup Gruyere Cheese Shredded
4 oz Thinly Sliced Prosciutto
1 ½ Cup Boneless Skinless Chicken Breast Shredded
3 Tbs. Sour Cream
2 tsp. Dijon Mustard
4 tsp. Unsalted Butter Softened
1 tsp. Fresh Thyme Leaves
Heat a large nonstick skillet over medium heat. Add oil to pan. Arrange 4 slices of bread in pan. Layer Cheese, prosciutto, and chicken over all four slices.
Combine sour cream, mustard and thyme in a bowl and mix well. Spread this over the remaining bread slices. Top each sandwich in the skillet with these sour cream side down.
Cook 3 minutes on each side. Transfer to cutting board and spread butter on all sides of sandwich. Cut and serve with wilted spinach or a salad, or your favorite winter soup.
