Spicy Beef Soup


2 Pounds Lean Ground Beef

1/2 Bag of Fingerling Potatoes Halved

2 Stalks Celery, Sliced

Salt And Pepper To Taste

2 Medium (2-1/2″ Dia) Onions, Chopped

1 Bunch Cilantro Chopped

1 Bag of Baby Carrots

2 Cans of Clamata V-8 Juice

2 Cups Water

Cheese Cloth for Herb Bag and Twine to Fasten

2 Star Anise

4 Stalks Lemon Grass Chopped

3 Cloves Garlic


Step 1 Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.

Step 2 In a large soup pot Place a the potatoes in a layer to cover the bottom. Sprinkle the celery over the potatoes, and cover with the ground beef. Season each layer with salt and pepper. Throw in the carrots, onions and chopped cilantro. Mix together the clamata juice and water, and pour over the top. Bring to a boil stir and simmer 10 minutes. Cover, and set to simmer on low for 6 to 8 hours. Remove the herb bag and toss. Serve with cornbread and beverage.
