Lemon-Thyme Loaf

Prep 25 Minutes, Bake 40 Minutes Plus Cooling Makes One Loaf

1/2 Cup Butter, Softened

3/4 Cup Sugar

1 Large Egg

1/2 Cup Of Buttermilk

1/2 Cup Sour Cream

1 ¾ Cups All Purpose Flour

2 Tablespoon Minced Fresh Thyme

1 Tablespoon Grated Lemon Zest

1/2 Tablespoon Baking Soda

1/4 Tsp Salt

Confectioner Sugar For Dusting
Step 1 in a large bowl, cream butter sugar until light and fluffy. Beat in the egg. Combine butter milk and sour cream. Combine the flour, time, just lemon zest, baking soda and salt; add to creamed mixture alternately with buttermilk mixture, beating well after each addition.

Step 2 transfer a greased 8×4 loaf pan. Bake at 350 until a toothpick inserted in center comes out clean, 40 to 50 minutes; cool for 10 minutes before moving from pan to a wire rack, cool bread completely; sprinkle loaf with confectioner sugar. Will also make three mini loaf pans or 12 muffins. Serve with breakfast or any meal. Also great to butter and broil until golden brown. Top with honey.
