Mediterranean Sausage n’ Veggie Pasta
1 (12 Ounce) Package Farfalle Pasta (Or Pasta of Choice)
1 Pound Chorizo Sausage, Crumbled (Or Italian Sausage)
1 Large Zucchini Chopped
¼ Cup Fresh Basil Leaves, Cut Into Thin Strips
½ Cup Pine Nuts
2 Cloves Garlic, Minced
½ Cup Grated Parmesan Cheese
2 Cups Cherry Tomatoes Halved
½ Cup Olive Oil
¼ Cup Red Wine Vinegar
Step 1 Cook pasta in salted, boiling water until al dente.
Step 2 While the pasta is cooking, brown chorizo over medium heat. Add nuts and brown them also; do not burn! Add garlic, and Add Zucchini, and cook until done. Remove from heat.
Step 3 Drain pasta. In a large bowl, toss together pasta, chorizo mixture, basil, cheese, and tomatoes. Whisk together olive oil and vinegar; pour over pasta, and toss. Serve. Servings 6-8
Serve with garden salad with vinaigrette and garlic crostini.
