Filo and Feta Rolls
2 Sheets Filo
2 Tablespoons All Purpose Flour
1 Block Of Good Feta Cut Into 6 Pieces Blotted To Absorb Moisture
Extra Virgin Olive Oil For Cooking And Drizzle
2 Teaspoons Dry Pepper Flakes
Directions:
Cut filo sheet in half lengthwise. Drizzle with evoo
dredge feta in flour mixture
drizzle filo wrap with evoo
sprinkle a little pepper flakes
roll lengthwise to ¾ way down then fold in sides and finish rolling
Heat oil till a piece of filo dropped in sizzles. Place the rolls in the hot oil and cook until golden. About 1 minute per side. Serve with Greek salad.
Variation: Add a few sprinkles of chopped green salad olives or kalamata olives on dough before rolling.
