Diva Tasting: Great Quick Breads…


A couple of these use yeast. However you know by now I’m not a pastry chef nor a big user of yeast dough, since so many good products exist on the grocery shelf already. These recipes are a great, quick way to have homemade breads quick and easy for meals, toasting or dipping.

(Note most loaf pans yield 8-12 Servings)

Jalapeno Cheese Bread


1 Sm. Jar Diced Jalapeno

2 Cups Shredded Cheddar Cheese

3 Cups Self-Rising Flour

1 Tablespoons White Sugar

1 (12 Fluid Ounce) Can Or Bottle Dark Beer


Step 1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.

Step 2 Blend green chiles and cheese together in a medium bowl.

Step 3 In a large bowl, stir together pepper mixture, flour, sugar and beer together in a large mixing bowl until you get a sticky dough. Scoop dough into prepared pan.

Step 4 Bake in preheated oven for 60 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.

Basic Quick Beer Bread


2 ½ Cups Self-Rising Flour

½ Cup All-Purpose Flour

¼ Cup Brown Sugar

1 Teaspoon Baking Powder

½ Teaspoon Salt

½ Teaspoon Onion Powder

1 Teaspoon Herb de Provence

1 (12 Fluid Ounce) Can Beer

½ Cup Butter Or Margarine, Melted


Step 1 Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9×5 inch baking pan.

Step 2 In a bowl, mix the self-rising flour, all-purpose flour, brown sugar, baking powder, salt, onion powder, Herb de Provence. Pour in the beer, and mix just until moistened. Transfer to the prepared baking pan. Top with the melted butter.

Step 3 Bake 45 to 55 minutes in the preheated oven, until a toothpick inserted in the center comes out clean. Cool on a wire rack

Double Pumpkin Beer Bread


1 ¾ Cups Whole Wheat Flour

1 Teaspoon Salt

1 Teaspoon Baking Soda

1 Teaspoon Ground Cinnamon

½ Teaspoon Pumpkin Pie Spice

¼ Teaspoon Ground Nutmeg

1 Cup White Sugar

Cup Canola Oil

2 Large Eggs

1 Egg White

Cup Pumpkin Beer

½ (15 Ounce) Can Pumpkin Puree

¼ Cup Water

1 Cup Chopped Walnuts (Optional)


Step 1 Preheat an oven to 350 degrees F (175 degrees C). Spray a 9×5-inch loaf pan with cooking spray. Combine flour, salt, baking soda, cinnamon, pumpkin pie spice, and nutmeg in a bowl; set aside.

Step 2 Beat the sugar, canola oil, whole eggs, egg white, pumpkin beer, and pumpkin puree together in a large bowl until smooth. Gradually stir in the flour mixture into the pumpkin mixture. Mix until smooth. Fold in ½ Cup nuts. Pour batter into the prepared loaf pan, and layer the remaining chopped walnuts on top.

Step 3 Bake in the preheated oven until a knife inserted into the center comes out clean, about 50 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack. Serves 12
