Haddock and Snow Peas


2 Pounds Haddock Fillets

1 Teaspoon Salt

Teaspoon Ground Black Pepper

3 Tablespoons Butter

¼ Cup Minced Onion

3 Tablespoons All-Purpose Flour

1 Teaspoon Ground Dry Mustard

½ Teaspoon Salt

Cup Heavy Cream

1 Cup Half-And-Half Cream

1 Cup Shredded Sharp Cheddar Cheese

½ Cup Shredded Monterey Jack Cheese

¼ Teaspoon Paprika


Step 1 Preheat oven to 350 degrees F (175 degrees C). Lightly butter a medium or large baking dish.

Step 2 Rinse and dry fillets. Season with 1 teaspoon salt and 1/8 teaspoon pepper.

Step 3 In a skillet or frying pan, melt butter over medium heat. Saute onion in butter until golden. Stir in flour until completely incorporated. Stir in mustard, 1/2 teaspoon salt, light and heavy creams. Cook until thickened, stirring constantly. Remove from heat and stir in cheeses. Pour sauce over fish and sprinkle with paprika.

Step 4 Bake in preheated oven for 30 minutes, until brown and bubbly. Serve with Stir Fry Snow Peas in Lemon Butter. Serve with rolls and beverage. Serves 8

Snow Peas


3 Teaspoons Butter

3 Cloves Garlic, Minced

1 Teaspoon Italian Seasoning

3 Pounds Fresh Snow Peas, Trimmed

4 Tablespoon Water, Or More As Needed

4 Tablespoon Extra-Virgin Olive Oil

1 Fresh Lemon Juiced and Zested

Kosher Salt And Ground Black Pepper To Taste


Step 1 Melt butter in a skillet over medium heat; cook and stir garlic until fragrant, about 30 seconds. Stir in Italian seasoning and snow peas. Add water; cook and stir until peas are bright green and tender, about 2 minutes. Stir in olive oil lemon zest and lemon juice. Season with salt and black pepper. Serves 6-8
