Mango Cheese Tarts
12 Frozen Tart Shells Thawed
1 (8 Ounce) Package Cream Cheese, Softened
½ Cup White Sugar
3 Mangoes, Peeled, Seeded And Diced
3 Tablespoons Lemon Juice
3 Cups Blueberries
⅓ Cup Confectioners’ Sugar For Dusting
Step 1 Preheat oven to 350 degrees F (175 degrees C).
Step 2 Bake tart shells in preheated oven for about 20 minutes, or until pastry is golden. Allow to cool.
Step 3 In a large bowl, combine cream cheese, 1/2 cup sugar, mangoes and lemon juice. Beat until mixture is fairly smooth, but still has chunks of mangoes. Spread into baked pastry shell and top with blueberries. Dust lightly with confectioners’ sugar before serving.
