Let’s Grill …Marinades

Crones Rule of Thumb: I always place my ingredients in a large resealable plastic bag and let marinate for at least 3 hours for better flavors. Overnight, when possible, is best.

Italian Marinade

Ingredients

1 (16 Ounce) Bottle Italian-Style Salad Dressing

1 Teaspoon Garlic Powder

1 Teaspoon Kosher Salt

4 Skinless, Boneless Chicken Breast Halves

Directions

Step 1 In a shallow baking dish, mix the salad dressing, garlic powder, and salt. Place the chicken in the bowl, and turn to coat. Marinate in the refrigerator at least 4 hours. (For best results, marinate overnight.)

Step 2 Preheat the grill for high heat.

Step 3 Lightly oil grate. Discard marinade, and grill chicken 8 minutes on each side, or until juices run clear.

Perfect Lemon Chicken Marinade

Ingredients

½ Cup Fresh Lemon Juice

½ Cup Soy Sauce

½ Teaspoon Ground Ginger

¼ Teaspoon Ground Black Pepper

4 (6 Ounce) Skinless, Boneless Chicken Breast Halves

Directions

Step 1 Rinse chicken breasts and pat dry with paper towels. Stir together the lemon juice, soy sauce, ginger, and black pepper in a bowl; pour into a large, resealable plastic bag. Add the chicken breasts, seal the bag, and massage to evenly coat chicken with lemon juice mixture. Place in refrigerator to marinate at least 20 minutes, or up to 24 hours.

Step 2 Preheat an outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.

Step 3 Drain and discard marinade from the bag, and place chicken on preheated grill. Cook until chicken is no longer pink and juices run clear, 6 to 8 minutes on each side.

Sweet Chicken Marinade

Ingredients

2 Cups Vegetable Oil

¾ Cup Distilled White Vinegar

¼ Cup Molasses

2 Tablespoons Soy Sauce

2 Tablespoons Lemon-Pepper Seasoning

½ Teaspoon Garlic Powder

½ Teaspoon Onion Powder

Directions

Step 1 Whisk together the oil, vinegar, molasses, soy sauce, lemon-pepper seasoning, garlic powder, and onion powder in a bowl.

Step 2 To use, marinate chicken for at least 8 hours before cooking as desired.

Floridian Chicken Marinade

Ingredients

3 Tablespoons Soy Sauce

1 Tablespoon Honey

1 Tablespoon Vegetable Oil

1 Teaspoon Lime Juice

1 Teaspoon Chopped Garlic

4 Skinless, Boneless Chicken Breast Halves

Directions

Step 1 In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.

Step 2 Preheat an outdoor grill for high heat.

Step 3 Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.

Asian Marinade

Ingredients

4 Cloves Garlic, Minced

½ Cup Soy Sauce

4 Skinless, Boneless Chicken Breasts

Directions

Step 1 In a large, nonporous bowl, combine the garlic and the soy sauce. Add the chicken and turn to coat well. Cover and marinate in the refrigerator for at least an hour.

Step 2 Preheat an outdoor grill for medium high heat and lightly oil the grate.

Step 3 Grill chicken over medium high heat for 10 to 15 minutes per side, or until internal temperature reaches 180 degrees F (80 degrees C). Discard any remaining marinade.

Basic Chicken Marinade

Ingredients

1 Cup Soy Sauce

½ Cup Vegetable Oil

1 Tablespoon Balsamic Vinegar

3 Tablespoons Brown Sugar

3 Cloves Garlic, Crushed

4 Boneless, Skinless Chicken Breast Halves

Directions

Step 1In a medium bowl, mix soy sauce, vegetable oil, sherry, brown sugar, and garlic. Pour into a large resealable bag. Place chicken in the bag, and shake to coat. Marinate in the refrigerator at least 4 hours.

Step 2Preheat an outdoor grill for high heat, and lightly oil grate.

Step 3Place chicken on the prepared grill. Cook 6 to 8 minutes on each side, or until no longer pink and juices run clear. Discard remaining marinade.

Asian BBQ Marinade

Ingredients

1 Cup White Sugar

1 Cup Soy Sauce

1 Cup Water

1 Teaspoon Onion Powder

1 Teaspoon Ground Ginger

1 Tablespoon Lemon Juice (Optional)

4 Teaspoons Hot Chile Paste (Optional)

Directions

Step 1 In a medium saucepan over high heat, whisk together the sugar, soy sauce, water, onion powder, and ground ginger. Bring to a boil. Reduce heat to low, and simmer 5 minutes.

Step 2 Remove the mixture from heat, cool, and whisk in lemon juice and hot chile paste. Place chicken in the mixture. Cover, and marinate in the refrigerator at least 4 hours before preparing chicken as desired.

Spicy Grilled Chicken Marinade

Ingredients

¾ Cup Dry White Wine

¼ Cup Olive Oil

1 Habanero Pepper, Seeded And Minced (Use Gloves)

1 Teaspoon Minced Garlic

1 Tablespoon Chopped Fresh Parsley

1 Teaspoon Chopped Fresh Sage

3 Rosemary Sprigs, Stripped And Chopped

1 Teaspoon Chopped Fresh Thyme

Directions

Step 1 Pour the wine and olive oil into a mixing bowl. Add the minced habanero pepper, garlic, parsley, sage, rosemary, and thyme; whisk until evenly blended.

Mango Teriyaki

Ingredients

1 ½ Cups Mango Nectar

1 ½ Cups Teriyaki Sauce

¾ Cup Dried Cherries

1 Clove Garlic, Minced

Kosher Salt And Pepper To Taste

Directions

Step 1 In a blender, thoroughly mix mango nectar, teriyaki sauce, dried cherries, garlic, salt and pepper. In the refrigerator, marinate meat in the mixture at least 2 hours before grilling as desired.
