Swamp Pot for a Party
10 Boneless, Skinless Chicken Thighs Chopped
4 Rings Smoked Sausage, Sliced
4 Cups Water
3 Quarts Chicken Stock
3 Tablespoons Kosher Salt, Or To Taste
1 Teaspoons Dried Rosemary
½ Teaspoons Dried Basil
3 Teaspoons Ground Black Pepper, Divided, Or More To Taste
2 Bags Fingerling Potatoes Halved
1 Tablespoon Hot Sauce, Or To Taste
Step 1 In a large Stock pot add water, chicken broth spices, and potatoes. Bring to a boil for 20 minutes; reduce heat to a simmer.
Step 2 In a large Skillet brown the chopped chicken remove to a plate. Brown the sausage in the skillet until well seared.
Step 2 Transfer chicken and sausage to the pot Stockpot. Simmer for 2 hours. Add more broth as needs.
Step 4. Serves 16. Serve with Corn Bread, Iced Tea and Salad.
