This is one of my all time favorite NO BAKE recipes. Especially good anytime, but especially for summer heat. I run this occasionally just because I like it so much.
No Bake Eclair Cake
Ingredients
2 (3 Ounce) Packages Instant French Vanilla Pudding Mix
3 Cups Half n’ Half Milk
¼ Cup Bailey’s Irish Cream Liqueur (Optional)
1 (8 Ounce) Creamy Frozen Whipped Topping, Thawed
1 Deli Round Pound Cake Sliced ½ In Thick
¼ Cup Half n’ Half
⅓ Cup Unsweetened Cocoa Powder
1 Cup White Sugar
3 Tablespoons Butter
1 Teaspoon Vanilla Extract
Directions
Step 1 In a large bowl, combine pudding mix and 3 cups Half n’ Half, and Liqueur; mix well. Fold in whipped topping and beat with mixer for 2 minutes.
Step 2 In a buttered 9×13 inch baking dish, spread a layer of slice pound cake on the bottom of the dish.
Step 3 Spread 1/2 of the pudding mixture over cake slices, then top with another layer of pound cake. Spread remaining pudding over cake; top second pudding layer with another layer of pound cake.
Step 4 To make topping: In a medium saucepan over medium-high heat, combine 1/4 cup Half n’ Half, cocoa and sugar and allow to boil for 1 minute; remove from heat and add butter and vanilla. Mix well and cool.
Step 5 Pour sauce over Cake layer and refrigerate until set; serve.
