Let’s Do Coffee Cake…

Italian Lemon Coffee Cake

Ingredients

¼ Cup Sliced Almonds

2 Eggs

¾ Cup White Sugar

½ Cup Vegetable Oil

¼ Cup Freshly Squeezed Lemon Juice

1 Lemon, Zested

1 ½ Cups All-Purpose Flour

1 Packet Lievito Pane Degli Angeli (such As Paneangeli®)*

Glaze (optional):

Cup Powdered Sugar

1 ½ Teaspoons Lemon Juice

Directions

Step 1 Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 6-cup, 7-1/2×3-inch Bundt® pan. Sprinkle almonds evenly around the bottom of the pan. Set aside.

Step 2 Beat eggs and sugar with an electric mixer in a large bowl. Add oil, lemon juice, and lemon zest; mix until well combined. Gradually beat in flour until it has been incorporated. Add Lievito and mix well. Pour batter evenly into the prepared pan.

Step 3 Bake in the preheated oven until a toothpick inserted into the center comes out clean, 28 to 30 minutes. Let cool for 10 minutes. Run a knife down the sides of the pan to assist in releasing the cake from the pan. Place in the freezer for 20 minutes. Remove from the freezer and invert cake onto a serving platter.

Step 4 Mix powdered sugar and lemon juice in a small bowl until glaze is smooth. Place glaze in a small resealable bag and snip the corner of the bag. Drizzle glaze over the top of the cake.

*Paneangeli(R) Lievito Pane degli Angeli is an Italian ingredient commonly used in baking. It can be purchased online, but if you prefer, you can substitute 1 1/2 teaspoons of baking powder, plus 1 teaspoon of vanilla extract.

Buttermilk Coffee Cake

Ingredients

2 ¼ Cups All-Purpose Flour

1  Cups White Sugar

1 Cup Brown Sugar

1 ½ Teaspoons Baking Powder

¾ Teaspoon Baking Soda

½ Cup Butter, Room Temperature

1 Cup Buttermilk

2 Eggs

½ Teaspoon Vanilla Extract

Directions

Step 1 Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13-inch baking dish.

Step 2 Combine flour, sugar, baking powder, and baking soda in a large bowl. Cut butter into flour mixture until mixture resembles coarse crumbs. Reserve about 1 cup butter crumbs.

Step 3 Stir buttermilk, eggs, and vanilla extract into remaining crumbs until batter is just combined; pour batter into prepared baking dish. Sprinkle reserved butter crumbs over batter.

Step 4 Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35 minutes.

Noni’s Blueberry Coffee Cake

Ingredients

¼ Cup Butter

¾ Cup White Sugar

1 Egg

½ Cup Milk

2 Cups All-Purpose Flour

2 Teaspoons Baking Powder

½ Teaspoon Salt

2 Cups Blueberries

½ Cup Brown Sugar

3 Tablespoons All-Purpose Flour

1 Teaspoon Ground Cinnamon

½ Cup Chopped Pecans

3 Tablespoons Butter

Directions

Step 1 Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9 inch springform pan. Sift together the flour, baking powder and salt. Set aside.

Step 2 In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the blueberries. Pour batter into prepared pan. In a small bowl, combine brown sugar, 3 tablespoons flour, cinnamon and chopped pecans. Cut in butter until crumbly. Sprinkle over the batter.

Step 3 Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. Serves 10-12

Note: or use a 6 cup large cupcake pan.
