Biscuits Galore
No-Fail Biscuits
Ingredients
2 Cups All-Purpose Flour
½ Teaspoon Salt
4 Teaspoons Baking Powder
½ Teaspoon Cream Of Tartar
2 Teaspoons White Sugar
½ Cup Butter, Chilled And Diced
¾ Cup Milk
Directions
Step 1 Preheat oven to 450 degrees F (230 degrees C).
Step 2 In a large bowl, sift together dry ingredients. Cut in butter until mixture resembles coarse oatmeal. Make a well in the center of the dry mixture and pour in the milk. Stir until dough begins to pull together then turn out onto a lightly floured surface.
Step 3 Press dough together and then roll out until 3/4 inch thick. Cut into 2 inch round biscuits and place on an ungreased baking sheet.
Step 4 Bake in preheated oven for 10 minutes, or until golden. 1 Dozen
Kentucky Biscuits
Ingredients
2 Cups All-Purpose Flour
2 ½ Teaspoons Baking Powder
½ Teaspoon Baking Soda
1 Dash Salt
1 Teaspoon White Sugar
½ Cup Butter
¾ Cup Buttermilk
Directions
Step 1 Preheat oven to 400 degrees F (200 degrees C).
Step 2 In a bowl, mix the flour, baking powder, baking soda, salt, and sugar. Cut in 1/2 cup butter until the mixture resembles coarse crumbs. Mix in the buttermilk. Turn out onto a lightly floured surface, and knead 2 minutes. Transfer to an ungreased baking sheet, roll into a 6×6 inch square, and cut into 12 even sections. Do not separate.
Step 3 Bake 15 minutes in the preheated oven, until a knife inserted in the center of the square comes out clean. Separate into biscuits, and serve hot.
Greek Yogurt Biscuits
Ingredients
2 Cups All-Purpose Flour
1 Teaspoon White Sugar
2 Teaspoons Baking Powder
½ Teaspoon Salt
¼ Teaspoon Baking Soda
½ Cup Cold Butter, Cut Into Small Cubes
½ Cup Cold Nonfat Greek Yogurt
¼ Cup Cold Seltzer, Or More As Needed
Step 1 Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
Step 2 Whisk flour, sugar, baking powder, salt, and baking soda together in a bowl. Cut in butter with a knife until mixture resembles coarse crumbs.
Step 3 Place the bowl in the freezer for 5 minutes.
Step 4 Stir in Greek yogurt until dough is combined. Add 1/4 cup seltzer; mix until dough is smooth. Add more seltzer if dough appears dry.
Step 5 Place dough on a floured piece of parchment paper and pat into a flat rectangle. Fold the rectangle in thirds. Rotate dough 90 degrees, gather any crumbs, and flatten into a rectangle again. Repeat folding, turning, and flattening twice more.
Step 6 Flatten dough to 1/2-inch thickness. Cut into twelve 2 1/2-inch rounds. Transfer rounds to a baking sheet.
Step 7 Bake in the preheated oven until golden brown, 10 to 15 minutes.
