Oven Roasted Vegetables
24 Cherry Tomatoes, Halved
1 Red Bell Pepper, Chopped
1 Yellow Bell Pepper, Chopped
2 Zucchini, Sliced
2 Red Onions, Quartered
3 Cloves Garlic, Crushed And Peeled
4 Tablespoons Olive Oil
1 Teaspoon Chopped Fresh Basil
Kosher Salt and Ground Black Pepper To Taste
Step 1 Preheat the oven to 350 degrees F (175 degrees C).
Step 2 Place cherry tomatoes, bell peppers, zucchini, red onions, and garlic in a resealable plastic bag drizzle with olive oil, shake until coated. Then place on a foil lined, large, rimmed baking sheet. Season with basil, salt and pepper.
Step 3 Bake in the preheated oven until vegetables are lightly browned and easily pierced with a fork, 35 to 40 minutes. Serve with lemon chicken or steak with a Mediterranean salad.
