Pumpkin Coffee Muffin

Ingredients

cooking spray

1 Spice Cake Mix

1 Cup Warm Water

¼ Cup Instant Espresso Coffee Granules

1 Cup Brown Sugar

1 (15 Ounce) Can Pumpkin Puree

1 Cup Oil

4 Eggs

2 Teaspoons Baking Soda

1 Teaspoons Salt

1 Teaspoon Ground Cinnamon

1 Teaspoon Ground Cloves

1 Teaspoon Ground Nutmeg

½ Teaspoon Baking Powder

Directions

Step 1 Preheat oven to 325 degrees F (165 degrees C). Spray 24 muffin cups with cooking spray or line with paper liners.

Step 2 Combine warm water and coffee granules together in a cup until coffee is dissolved; pour into a large bowl. Mix cake mix, sugar, pumpkin puree, vegetable oil, eggs, baking soda, salt, cinnamon, cloves, nutmeg, and baking powder into coffee until batter is thoroughly mixed; Fill muffin cups with batter.

Step 3 Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 20 to 30 minutes. 24 Muffins
