Potato Pancakes
Ingredients
2 Cups Mashed Potatoes
1 Cup All-Purpose Flour
1 Onion, Diced
1 Egg
½ Teaspoon Ground Black Pepper
½ Teaspoon Salt
½ Cup Vegetable Oil, Or As Needed
Directions
Step 1 Mix mashed potatoes, flour, onion, egg, black pepper, and salt together in a bowl until batter consistency.
Step 2 Heat vegetable oil in a skillet over medium heat. Drop 4-inch circles of batter into hot oil. Cook until golden brown, about 5 minutes per side. Remove with a slotted spoon and drain on paper towels. Repeat with remaining batter. Serves 4
Fish Fritters
Ingredients
4 Tablespoons Olive Oil, Divided
4 Tilapia Fillets
Sea Salt And Ground Black Pepper To Taste
½ Cup Bread Crumbs
4 Green Onions, Diced
1 Egg
4 Tablespoons Lemon Juice
4 Tablespoons Crumbled Feta Cheese
1 Tablespoon Garlic Powder
1 Tablespoon Dried Dill Weed
2 Teaspoons Hot Sauce
Directions
Step 1 Heat a large skillet over medium-high heat. Add 1 tablespoon oil. Add tilapia fillets, salt, and pepper and cook until easily flaked with a fork, about 2 minutes on each side. Turn off the heat and shred the fish with 2 forks. Transfer to a bowl.
Step 2 Toss the fish with bread crumbs, green onions, egg, lemon juice, feta cheese, garlic powder, dill, and hot sauce.
Step 3 Form patties with your hand and refrigerate for at least 1 hour.
Step 4 Set a skillet over medium-high heat. Add remaining oil. Cook patties in the hot oil until golden brown, 1 to 2 minutes on each side. Serve with aioli, tater tots, and beverage. Serves 4
