PUMPKIN STRATA
Ingredients
Strata:
Cooking Spray
1 Loaf Day Old French Bread, Or Cinnamon Swirl Loaf Cubed
1 Can Pumpkin
1 Teaspoon Cinnamon
1/8 Teaspoon Nutmeg
1 Teaspoon Pumpkin Spice
2 (8 Ounce) Packages Cream Cheese, Cut Into 1/2-Inch Cubes
12 Eggs
½ Cup Maple Syrup
2 Cups Half N’ Half
Syrup:
2 Cups Brown Sugar
3 Tablespoons Cornstarch
1 ½ Cups Water
3 Tablespoons Butter
Directions:
Step 1 Coat a 9×13 inch baking dish with cooking spray. In a bowl mix cream cheese, pumpkin, cinnamon, nutmeg, pumpkin spice eggs, maple syrup, milk. Beat until combined. Place the bread cubes in a bowl and cover. Let sit in refrigerator for 6 hours or overnight. When bread has soaked up the magic, place in baking pan.
Step 2 Place in Preheated oven to 350 degrees F (175 degrees C).
Step 3 Bake strata, covered, for 45 minutes. Remove cover, and bake for an additional 30 minutes OR until set and a toothpick placed in the middle comes out clean.
Step 4 While the strata is baking, prepare the syrup. Combine sugar, cornstarch, and water in a saucepan. Bring mixture to a boil over high heat; cook for 5 minutes; continue cooking for 10 minutes. Remove from heat, and stir in butter. Serve warm over slices of the strata.
