Blueberry Bottom Cake

Ingredients

1 (15.25 Ounce) Package White Cake Mix (Follow Box Directions)

1 Cup Water

4 Eggs

½ Cup Vegetable Oil

4 Cups Fresh Blueberries

1 Cup White Sugar

1 (3 Ounce) Package Strawberry-Flavored Gelatin

3 Cups Miniature Marshmallows

2 Cups Frozen Whipped Topping (Such As Cool Whip®)

Directions

Step 1 Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking pan.

Step 2 Combine cake mix, water, eggs, and vegetable oil in a large bowl; mix until moistened. Beat with an electric mixer on medium speed until batter is smooth, about 2 minutes.

Step 3 Spread blueberries in the bottom of the baking pan. Layer sugar, gelatin, and marshmallows on top. Pour cake mix evenly over marshmallows and smooth the top.

Step 4 Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 50 to 55 minutes. Transfer baking pan to a wire rack and let cool, about 30 minutes. Serve cake with whipped topping. Serves 12

New Orleans Style Pasta

Ingredients

4 Box Angel Hair Pasta

4 Skinless, Boneless Chicken Breast Halves, Chopped

3 Teaspoons Cajun Seasoning

4 Tablespoons Butter

½ Half Jar Marinated Roasted Red Peppers

1 Green Bell Pepper, Chopped

1 Small Package Fresh Baby Bella Mushrooms, Sliced

3 Green Onions, Chopped

2 Cups Heavy Cream

¼ Teaspoon Dried Basil

¼ Teaspoon Lemon Pepper

1 Teaspoon Kosher Salt

1 Teaspoon Garlic Powder

Teaspoon Ground Black Pepper

1 Cup Grated Parmesan Cheese

Directions

Step 1 Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Step 2 Place the chicken and the Cajun seasoning in a plastic bag. Shake to coat. In a large skillet over medium heat, saute the chicken in butter until almost tender (5 to 7 minutes).

Step 3 Add the roasted red bell pepper, green bell pepper, mushrooms and green onion. Saute and stir for 2 to 3 minutes. Reduce heat.

Step 4 Add the cream, basil, lemon pepper, salt, garlic powder and ground black pepper and half of the cheese. Heat through. Add the cooked pasta, toss and heat through. Sprinkle with remaining grated Parmesan cheese and serve. Serves 4
