Roasted Cabbage
Ingredients
2 Tablespoons Extra-Virgin Olive Oil
½ Head Green Cabbage, Cut Into 4 Wedges
1 Pinch Garlic Powder, Or To Taste
1 Pinch Red Pepper Flakes, Or To Taste
Sea Salt And Ground Black Pepper To Taste
2 Lemons, Halved
Directions
Step 1 Preheat oven to 450 degrees F (230 degrees C).
Step 2 Brush both sides of each cabbage wedge with olive oil. Sprinkle garlic powder, red pepper flakes, salt, and pepper over each wedge. Arrange wedges on a baking sheet.
Step 3 Roast in the preheated oven for 15 minutes; flip cabbage and continue roasting until browned and charred in some areas, about 15 minutes more. Squeeze lemon over each wedge.
Note: Keep the core attached to the cabbage when cutting into wedges to help it hold together.
Vintage Green Bean Casserole
Ingredients
4 Pounds Fresh Green Beans, Trimmed And Cut Into 2-Inch Pieces
2 (10.75 Ounce) Cans Cream Of Mushroom Soup
4 Cups Sharp Cheddar Cheese, Shredded
1 (6 Ounce) Can French-Fried Onions
Directions
Step 1 Preheat oven to 350 degrees F (175 degrees C).
Step 2 Heat a large saucepan of salted water to a boil; add green beans and cook just until slightly tender, about 5 minutes. Drain.
Step 3 Mix green beans and cream of mushroom soup, together in a bowl, ½ The Cheddar Cheese; spread into a 9×13-inch baking dish. Sprinkle remaining Cheddar cheese over green been mixture and top with French-fried onions.
Step 4 Bake in the preheated oven until cheese is melted and browned, about 30 minutes.
Note: You may use 2 large packages of frozen cut green beans or 5 cans, drained, instead of fresh.
Broiled Baked Potatoes
Ingredients
3 Large Baking Potatoes, Halved
4 Tablespoons Olive Oil
2 Cups Shredded Jack Cheese
2 Teaspoons Freshly Ground Black Pepper
2 Teaspoons Garlic Powder
2 Teaspoons Dried Rosemary
Sea Salt To Taste
Directions
Step 1 Place the potatoes into a large pot with water to cover. Bring to a boil and cook over medium-high heat for about 10 minutes, or until tender.
Step 2 Preheat Oven to broil to medium-high heat. Drain potatoes and toss with olive oil, black pepper, rosemary and salt to taste.
Step 3 Place the potatoes skin-side down on foil lined baking sheet. Broil until golden; up to about 10 minutes depending on oven. Remove potatoes from oven and sprinkle with the reserved olive oil mixture and cheese. Place back under broiler until cheese is melted. Serves 6
Roasted Broccoli
Ingredients
14 Ounces Broccoli
1 Tablespoon Olive Oil
Salt And Ground Black Pepper To Taste
Directions
Step 1 Preheat oven to 400 degrees F (200 degrees C).
Step 2 Cut broccoli florets from the stalk. Peel the stalk and slice into 1/4-inch slices. Mix florets and stem pieces with olive oil in a resealable bag and transfer to a baking sheet; season with salt and pepper.
Step 3 Roast in the preheated oven until broccoli is tender and lightly browned, about 18 minutes. Serves 4
