Toaster Oven Treats II

Spicy Bruschetta


1 Tablespoon Extra-Virgin Olive Oil

2 Cups Cooked Pinto Beans Drained

1 Tablespoon Water, Or More As Needed

3 Tablespoons Butter

1 French Baguette, Sliced 3/4-Inch Thick

12 Ounces Mexican Cheese, Shredded

4 Tablespoons Pico De Gallo, Or To Taste


Step 1 Heat oil in a large skillet over medium heat. Add beans and water; mash until soft and heated through, about 5 minutes.

Step 2 Spread butter on baguette slices; arrange on a toaster oven tray.

Step 3 Bake in the toaster oven at 375 Degrees until golden, 2 to 3 minutes. Spread beans on top. Cover with cheese.

Step 4 Bake in the toaster oven until cheese is melted and lightly browned, 5 to 7 minutes. Transfer to a serving platter. Garnish with pico de gallo.

Toaster Oven Apple Crisp for One


Cooking Spray

1 Medium Apple – Peeled, Cored, And Sliced

1 Tablespoon All-Purpose Flour

1 Tablespoon Brown Sugar

1 Teaspoon Ground Cinnamon

1 Pinch Kosher Salt

2 Tablespoons Water, Or More As Needed

1 Tablespoon Butter, Cut Into Small Pieces

1 Tablespoon Caramel Ice Cream Topping


Step 1 Preheat the toaster oven to 375 degrees F (190 degrees C) according to manufacturer’s instructions. Lightly coat a baking tray with cooking spray.

Step 2 Pile apple slices onto the baking tray. Mix flour, brown sugar, cinnamon, and salt together; sprinkle evenly over apples. Drizzle water over the topping. Arrange butter pieces as uniformly as possible over the topping.

Step 3 Bake in the preheated toaster oven until apples are tender, about 30 minutes. Drizzle caramel sauce on top and scoop into a bowl. Serves 1

Hamburger Bun Pizza


4 Hamburger Buns, Split

½ Cup Canned Pizza Sauce

2 Cups Shredded Mozzarella Cheese

16 Slices Pepperoni Sausage


Step 1 Preheat the oven to 375 degrees F (190 degrees C).

Step 2 Place the bun halves cut side up onto a baking sheet. Spoon some of the pizza sauce onto each one. Top with mozzarella cheese and pepperoni slices.

Step 3 Bake for 10 minutes in the preheated oven, or until the cheese is melted and browned on the edges.

Open Face Veggie Melt


4 Slices Whole-Grain Bread, Lightly Toasted

1 Avocado, Sliced

1 Cup Sliced Cremini Mushrooms

Cup Sliced Toasted Almonds

1 Tomato, Sliced

4 Slices Swiss Cheese Or Favorite Cheese


Step 1 Preheat the oven broiler.

Step 2 Lay the toasted bread out on a baking sheet. Top each slice of bread with 1/4 of the avocado, mushrooms, almonds, and tomato slices. Top each with a slice of cheese.

Step 3 Broil the open-face sandwiches until the cheese melts and begins to bubble, about 2 minutes. Serve the sandwiches warm. Serves 4

Toaster Oven Tuna Melt


1 (5 Ounce) Can Tuna, Drained

¼ Cup Finely Chopped Celery

¼ Cup Chopped Green Onion (Optional)

3 Tablespoons Mayonnaise

1 Tablespoon Lemon Juice

½ Teaspoon Curry Powder, Or To Taste

2 Burger Buns, Split, Toasted And Buttered

4 Thin Slices Cheddar Cheese


Step 1 Preheat the oven’s broiler.

Step 2 In a medium bowl, stir together the tuna, celery, green onion, mayonnaise, lemon juice and curry powder. Spoon equal amounts onto each bun half, and top with a slice of cheese. Place the sandwiches on a baking sheet.

Step 3 Broil for 2 to 3 minutes, or until cheese is melted and toasty. Serve hot.

Brunch or Lunch Bacon Cheese Pear Sandwich


1 Bosc Pear, Thinly Sliced

1 ½ Cups Apple Juice

6 Slices Bacon Crisp and Crumbled

2 Rosemary Focaccia Bread, Or Other Square Rolls, Split

6 Ounces Feta Cheese, Crumbled


Step 1 Place the pear slices in a skillet, and pour in the apple juice. Cook over medium heat until the pears are soft, about 5 minutes. Drain pears and reserve; discard juice.

Step 2 Meanwhile, place the bacon in a skillet and cook over medium-high heat until evenly brown. Drain on paper towels. Crumble and set aside.

Step 3 Preheat the oven broiler.

Step 4 Place the focaccia bread slices on a baking sheet. Divide the pear slices evenly among the bread, and top evenly with the bacon, and then with the blue cheese.

Step 5 Broil the sandwiches in the preheated broiler until the cheese melts, about 2 minutes. Serves 4
