Whitefish with Spinach and Tomatoes
Ingredients
4 (4 Ounce) Fillet Cod Or Haddock
Kosher Salt And Ground Black Pepper To Taste
¼ Teaspoon Garlic Powder, Or To Taste
1 Cup Roughly Chopped Spinach, Or To Taste
1 Tomato, Seeded And Diced
3 Tablespoons Chopped Onion
4 Tablespoon Olive Oil, Or To Taste
3 Tablespoon Balsamic Vinegar, Or To Taste
½ Cup Shredded Mozzarella Cheese
Directions
Step 1 Preheat an oven to 375 Degrees
Step 2 Place the fish on a piece of aluminum foil and season with salt, black pepper, and garlic powder. Top top with spinach, tomato, and onion; season again with salt and black pepper. Drizzle olive oil and balsamic vinegar over cod and top with mozzarella cheese. Fold foil over fish creating a packet, crimping the edges together making a seal.
Step 3 Cook on the preheated oven until fish flakes easily with a fork, 10 to 12 minutes. Serve with rice pilaf, dinner rolls and salad with vinaigrette. Serves 4
