Cheesy Spinach Rolls Appetizer
These cheesy, spinach packed rolls that combine the creaminess of ricotta cheese and the health benefits of green spinach. They are delicious fresh from the oven with a good dollop of our Sweet Asian Dipping Sauce.
1 Package Egg Roll Wrappers
3 Boxes of frozen spinach, thawed and well drained
1 Pint of fresh ricotta cheese
1 8 0z Cream Cheese Softened
1 cup of finely chopped spring onions
1 cup of shredded cheddar
½ Cup Parmesan
2 tablespoon of olive oil
½ a teaspoon of ground nutmeg
3 eggs (2 whisked)
2 tablespoons of sesame seeds
Sea salt and black pepper
1 Teaspoon Minced Garlic
To Serve We Suggest… Asian Dipping Sauce
Step 1 Pre-heat oven to 180C (350F). To make the rolls, lightly fry spring onions in olive oil until soft. In a large bowl add spinach, ricotta, cream cheese, Parmesan cheese, cheddar, 1 egg, nutmeg, garlic and cooked spring onions. Stir all ingredients to combine and season with salt and pepper.
Step 2 Place and egg roll on a flat surface, Spoon the spinach and ricotta mix along one side in a long log shape. Brush the opposite side of the pastry with whisked egg. Roll the egg roll up and Brush with additional egg and sprinkle with sesame seeds. Repeat for the remaining egg rolls until filling is used up.
Step 3 Place rolls on a sheet of baking paper on a baking tray and bake in oven for approximately 25-30 minutes until rolls are golden and cooked through. Remove from oven, serve hot.
Note: You may also use won ton wrappers and just fold over filling.
