Indian Green Beans and Oven Roasted Potatoes
3 Tablespoons Butter
1 Medium Onion, Chopped
1 Pound Chopped Green Beans
1/2 Teaspoon Ground Cumin
1/2 Teaspoon Ground Ginger
1/2 Teaspoon Ground Coriander
½ Teaspoon Curry Powder
1/4 Teaspoon Ground Black Pepper
Sea Salt To Taste
Melt butter in a large skillet over medium heat. Add the onion, and cook until tender. Stir in the green beans , and season with cumin, ginger, coriander, pepper and salt. Cook and stir for a few minutes, then reduce the heat to medium-low, and cover the pan. Cook for 20 minutes, stirring occasionally until vegetable is tender.
3 Pounds Small Red New Potatoes, Halved
1/4 Cup Olive Oil
1 Teaspoon Salt And Freshly Ground Black Pepper
Adjust oven rack to lowest position and heat oven to 450 degrees. Toss potatoes with oil, salt and pepper. Arrange, cut side down, on a large lipped cookie sheet or jellyroll pan.
Roast until tender and golden brown, about 30 minutes (check after 20 minutes). Transfer to a serving dish.
