Breakfast Casserole
Ingredients
10 Eggs, Beaten
1 Cup Half n Half
1 Teaspoon Salt
⅛ Teaspoon Ground Black Pepper
Cooking Spray
1 Can of Flaky Biscuits Quartered
1 (12 Ounce) Package Cooked, Crumbled Breakfast Sausage
1 Pint of cherry tomatoes
1 Medium Onion Chopped
1 Package Frozen Spinach
1 Cup Shredded Monterey Jack Cheese
1 Cup Shredded Cheddar Cheese
1 Cup Feta
Directions
Step 1 In a large bowl Whisk eggs, milk, salt, and black pepper together; fold in sausage, egg mixture, cheeses, and vegetables. Let sit in refrigerator 1 hour. Remove casserole from refrigerator and let sit at room temperature for 15 minutes.
Step 2 Spray a 9×13 baking dish with cooking spray. Spread biscuit pieces out in an even layer on the bottom of the prepared dish; pour the casserole mixture over the biscuits.
Step 3 Preheat oven to 350 degrees F (165 degrees C).Cover with aluminum foil
Step 4 Bake casserole in the preheated oven until bubbling and hot throughout, about 60 minutes. Remove foil and bake 20 or minutes more or until set in the middle depending on your oven.
