Quick Breakfast Casserole


Cooking Spray

5 Large Eggs, Beaten

2 Cups Shredded Sharp Cheddar Cheese

1 Cup Ricotta

¼ Cup All-Purpose Flour

6 Tablespoons Salted Butter, Melted

1 Teaspoon Baking Powder

½ Teaspoon Kosher Salt

½ Teaspoon Hot Sauce (Optional)


Step 1 Preheat the oven to 350 degrees F (175 degrees. Coat an 8-inch square baking pan with cooking spray.

Ste p 2 Combine eggs, Cheddar cheese, ricotta cheese, flour, butter, baking powder, and salt in a large bowl. Stir to mix well. Pour into the prepared baking dish.

Step 3 Bake in the preheated oven until golden brown and a knife inserted into the center comes out clean, about 25 minutes. Let cool for 5 minutes. Top with hot sauce before serving. Serves 4

Variation: Try mixing in green chiles (in place of the hot sauce), also consider adding spinach, and/or sliced cremini mushrooms.
