Brunch Casserole


8 Ounces Pork Sausage

1 (10 Ounce) Package Chopped Frozen Broccoli, Thawed And Drained

1 Cups Shredded Cheddar Cheese, Divided

1 Cup Ricotta Cheese

10 Eggs, Lightly Beaten

½ Cup Cream

1 Teaspoon Ground Black Pepper

1 Teaspoon Garlic Powder

1 Teaspoon Kosher Salt

1 Pint Cherry Tomatoes Halved

1 Cup Cheddar for Topping


Step 1 Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.

Step 2 Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish.

Step 3 In a large bowl, Whisk eggs and cornmeal together, add in cooked sausage, all vegetables, cheeses and spices. Pour into baking dish and Sprinkle with remaining Cheddar.

Step 4 Cover with aluminum foil, and bake 50 minutes in the preheated oven. Uncover, and bake for an additional 15 minutes until set in the middle, (depending on your oven) Let stand for 10 minutes before serving.
