I love Mediterranean everything. Here are a couple of sauces and marinades that are very versatile.
Zhug Sauce-Marinade-Sauce AND Garlicky Tahini 2
Garlicky Tahini
1 Cup Tahini Paste
2 Tsp. Fresh Lemon Juice
1 Garlic Clove Grated (or To Taste)
1 Tsp. Kosher Salt
½ Cup Ice Water
Directions:
And a medium bowl whisk together all ingredients until mixture smooth out and becomes light in color(if it doesn’t, add a bit more ice water). Taste for something seasoning adding more lemon juice or salt if desired. Keep for a week in the refrigerator
This delicious sauce is good for marinade, dipping sauce and much more….
RED ZHUG SAUCE
Ingredients:
1 Teaspoon Of Coriander Seeds And
2 Teaspoons Of Cumin Seeds, Toasted In A Pan Until Fragrant
1/3 Cup Grapeseed Oil
3 Fresh Serrano Peppers,
One Garlic Clove, Peeled
1 Teaspoon Of Ground Turmeric
1 Teaspoon Of Kosher Salt.
Directions
In a spice grinder grind toasted seeds until mixture forms a powder transfer a mixture to a blender add remaining ingredients and blend. Keep for a month in the refrigerator.
