Chicken and Artichokes
1 (15 Ounce) Can Artichoke Hearts, Drained And Chopped
1 Cup Grated Parmesan Cheese
1 Cup Shredded Romano
1 Cup Mayonnaise
½ Teaspoon Garlic Salt
6 Skinless, Boneless Chicken Breast Halves
Step 1 Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish with cooking spray.
Step 2 Mix together artichoke hearts, Parmesan cheese, Romano, mayonnaise, and garlic Salt in a medium bowl. Place chicken in the prepared baking dish; cover chicken evenly with artichoke mixture.
Step 3 Bake, uncovered, in the preheated oven until chicken is no longer pink in the center and juices run clear, about 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serves 6 Serve over rice pilaf, with roasted broccoli and crusty bread with dipping sauce.
