Air Fryer Roasted Potatoes
1 Pound Baby Yukon Gold Potatoes (About 1-Inch Wide)
1 Tablespoon Olive Oil
2 Teaspoons Italian Seasoning
½ Teaspoon Garlic Powder
½ Teaspoon Kosher Salt
¼ Teaspoon Freshly Ground Black Pepper
Heat an air fryer to 400°f. Meanwhile, halve 1 pound baby yukon gold potatoes and place in a medium bowl. Add 1 tablespoon olive oil, 2 teaspoons italian seasoning, 1/2 teaspoon garlic powder, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper, and toss to coat.
Arrange the potatoes in an even layer in the air fryer basket or tray (air fry in batches if needed). Air fry until lightly browned with crispy edges, tossing halfway through, about 20 minutes total.

Preheat your air fryer. Adding your potatoes to an already-hot air fryer helps maximize their crispiness. Even if your air fryer doesn’t have a setting for this, simply set it to 400°f and let it run while you prep and season the potatoes.
Serve with a dipping sauce. Crispy potatoes crave a creamy sauce (think: ketchup, chipotle mayo, or your favorite Sauce, A squeeze of lemon juice, a sprinkling of parsley, or a shower of Parmesan cheese would also be delicious.
