Vegetarian Chickpea Sandwiches
Ingredients
1 (19 Ounce) Can Garbanzo Beans, Drained And Rinsed
1 Stalk Celery, Diced
½ Onion, Chopped
3 Tablespoons Mayonnaise
1 Tablespoon Lemon Juice
1 Teaspoon Dried Dill Weed
Kosher Salt And Pepper To Taste
Directions
Step 1 Drain and rinse chickpeas. Pour chickpeas into a medium size mixing bowl and mash with a fork. Mix in celery, onion, mayonnaise (to taste), lemon juice, dill, salt and pepper to taste. Serve with baked green bean fries, chips and beverage.
NOTE: I recommend serving on toasted sourdough artisan bread or toasted marbled rye or fill half a pita pocket and top with tomatoes and lettuce and even tzatziki sauce.
