Sausage and Cabbage Casserole
1 Small Head Cabbage Chopped
2 Cups Diced Potatoes
1 (16 Ounce) Package Smoked Kielbasa Sausage, Sliced
1 Lb. Sage Sausage Browned to Crumbly
1 Cup Half N’ Half
4 Eggs, Beaten
1 Teaspoon Kosher Salt
½ Teaspoon Ground Black Pepper
5 Slices Artisan Sour Dough Bread, Cut Into Cubes
½ Cup Butter, Sliced
Step 1 Preheat oven to 400 degrees F (200 degrees C). Brown Sausage to crumbly.
Step 2 Remove and wash outer leaves from cabbage; prepare a 13×9-inch pan sprayed
Step 3 Mix cabbage, potatoes, and smoked sausage and browned sausage in a bowl; spread in the baking dish.
Step 4 Whisk milk, eggs, salt, and pepper together in a bowl; add bread cubes. Set aside until bread absorbs some liquid, 1 to 2 minutes; pour over the cabbage mixture. Top with butter slices.
Step 5 Bake in preheated oven until the potatoes are tender and the top is browned, about 45-55 minutes. Servings 8; Serve in pasta bowls with garlic toast, salad and beverage.
