Avocado Toast/Avocado Toast X5

Avocado Toast with Crumbled Crispy Pancetta

Ingredients

1 Slice Pancetta, Diced

1 Egg

2 Slices Prosciutto

1 Slice Rye Bread, Toasted

½ Ripe Avocado, Diced, Or To Taste

Kosher Salt And Ground Black Pepper To Taste

Directions

Step 1 Place pancetta in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 5 minutes. Drain on a paper towel.

Step 2 Fill a large saucepan with 2 to 3 inches of water and bring to a boil. Reduce the heat to medium-low and keep the water at a gentle simmer. Crack egg into a small bowl then gently slip egg into the simmering water, holding the bowl just above the surface of water. Cook until egg white is firm and the yolk thickens, 2 1/2 to 3 minutes. Remove the egg from the water with a slotted spoon and dab on a paper towel to remove excess water.

Step 3Place prosciutto on the toast. Spread a generous layer of avocado on top; season with salt and pepper. Add pancetta; top with the poached egg.

Lemon Avocado Toast

Ingredients

2 slices whole grain bread

½ avocado

2 tablespoons chopped fresh cilantro, or more to taste

1 teaspoon Meyer lemon juice, or to taste

¼ teaspoon Meyer lemon zest

1 pinch cayenne pepper

1 pinch fine sea salt

Directions

Step 1 Toast bread slices to desired doneness, 3 to 5 minutes.

Step 2 Mash avocado in a bowl; stir in cilantro, Meyer lemon juice, Meyer lemon zest, cayenne pepper, and sea salt. Spread avocado mixture onto toast. 2 Servings

Tomato Avocado Toast

Ingredients

½ Avocado – Peeled, Pitted, And Mashed

1 Teaspoon Garlic Salt

1 Slice Ciabatta Bread

3 Slices Tomato

1 Pinch Ground Black Pepper To Taste

Directions

Step 1 Mix mashed avocado and garlic salt together in a bowl; spread onto ciabatta bread. Layer tomatoes over avocado and top with black pepper. 1 Serving

Balsamic Avocado Toast

Ingredients

1 Slice Artisan Sour Dough Bread

2 Teaspoons Balsamic Vinegar or Trader Joe’s Balsamic Glaze

¼ Avocado, Sliced

1 Dash Paprika, Or To Taste

Kosher Salt And Freshly Cracked Black Pepper To Taste

Directions

Step 1 Toast the bread lightly, about 1 minute. Sprinkle vinegar on the toasted bread.

Step 2 Layer avocado slices on the bread. Sprinkle paprika, salt, and pepper on top.

Avocado Guacamole Toast

Ingredients

1 Slice Artisan Sourdough Bread or Everything Bagel

2 Tablespoons Prepared Guacamole

½ Teaspoon Everything Bagel Seasoning

Directions

Step 1 Toast bread until desired doneness. Spread with guacamole, then sprinkle with everything bagel seasoning. Serves 1

Eggs N’ Toast

Ingredients

1 Small Shallot, Thinly Sliced Into Rings

1 Tablespoon Red Wine Vinegar

Salt To Taste

1 Small Avocado, Pitted And Peeled

¼ Lime, Juiced

1 Egg

1 Tablespoon White Vinegar

Freshly Ground Black Pepper To Taste

1 Slice Whole-Grain Crusty Bread

1 Pinch Aleppo Pepper, To Taste

Directions

Step 1 Combine shallot, red wine vinegar, and a pinch of salt in a bowl; set aside. Mash avocado with lime juice and salt in a second bowl.

Step 2 Heat 2 to 3 inches of water in a small, shallow saucepan until boiling. Add vinegar and reduce heat to a light simmer. Crack egg into a small ramekin and lower it to the surface of the water, carefully easing it out of the ramekin into the simmering water. Poach egg until white is completely set and yolk is slightly soft, 3 to 4 minutes. Remove with a slotted spoon and transfer to a paper-towel lined plate. Sprinkle with salt and pepper.

Step 3 Toast bread to your liking and remove to a plate. Top with mashed avocado, some of the pickled shallot, and poached egg. Sprinkle with aleppo pepper and serve immediately.
