Creamy Spinach Stuffed Chicken


2 (10 Ounce) Package Frozen Chopped Spinach, Thawed\Drained

1 Large Yellow Onion, Chopped

2 Cup2 Ricotta Cheese

8 Skinless, Boneless Chicken Breast Halves

3 Tablespoons Cajun-Style Seasoning

5 Tablespoons Melted Butter


Step 1 Preheat oven to 350 degrees F (175 degrees C).

Step 2 Squeeze excess water out of thawed spinach; in a large bowl, mix spinach with onion and ricotta cheese and 1 Tablespoon of Cajun Seasoning set aside.

Step 3 Season chicken breasts with Cajun-style seasoning, then place 1/8 of cheese/spinach mixture in the center of each breast and fold in half. Secure with toothpicks and place in a lightly greased 9×13 inch baking dish.

Step 4 Brush each with melted butter and bake at 350 degrees F (175 degrees C) for about 25 minutes, or until chicken is cooked through and juices run clear. Serves 8. Serve with Garlic Mash Potatoes, Garden Salad with Lemon Vinaigrette and Crostini.
