Ricotta Cake
1 Cup Sugar
1 Cup Cold Butter Chopped
1 Cup Ricotta Cheese
3 Eggs
2 Cups Self-Rising Flour
1 Teaspoon Baking Powder
1 Cup Pecans or Walnuts Chopped/ Tossed in 1 Tablespoon of Flour (Optional)
Step 1 Place butter, ricotta, eggs and sugar in a medium bowl and mix well.
Step 2 In a medium bowl mix flour, baking powder.
Step 3 Fold flour mixture slowly into ricotta mixture and mix on low until combined. Fold in nuts.
Bake in a buttered bunt pan at 375 Degrees for 55-60 minutes until golden and toothpick comes our clean. Serves 8-10
