Wherever I live, one of my favorite things, besides good museums and good theater, is to find a great Tea Room and indulge in afternoon tea when possible. I love lemon curd with my scones and many other treats.
Lemon Curd Perfection
¾ cup fresh lemon juice
¾ cup white sugar
½ cup unsalted butter, cubed
3 large eggs
1 tablespoon grated lemon zest
Step 1 Combine lemon juice, sugar, butter, eggs, and lemon zest in a 2-quart saucepan.
Step 2 Cook over medium-low heat, whisking constantly, until mixture thickens and bubbles, about 6 minutes. 12 Servings
