Spinach and Potatoes

Ingredients

3 Tablespoons Butter

1 Large Onion, Chopped

3 (3 Ounce) Packages Pancetta Bacon, Finely Chopped

6 Large Potatoes, Peeled And Thinly Sliced

Kosher Salt And Pepper To Taste

2 (10 Ounce) Packages Frozen Chopped Spinach, Thawed And Drained

6 Cups Shredded Mexican Cheese Blend

1 Pint Heavy Cream

Directions

Step 1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.

Step 2 Melt the butter in a skillet over medium heat, and saute the onion and pancetta until onion is tender and pancetta is cooked through.

Step 3 Place all ingredients in a large mixing bowl and combine. Pour into the baking dish.

Step 4 Cover, and bake 1 hour in the preheated oven. Uncover, and continue baking 30 minutes, until bubbly and lightly browned. 12 Servings

Creamed Spinach Casserole

Ingredients

Topping:

6 Teaspoons Salted Butter

1 Cup Italian-Seasoned Bread Crumbs

Spinach:

3 (9 Ounce) Packages Frozen Chopped Spinach\Squeezes Dry

6 Tablespoons Water

½ Cup Cream, Or As Needed

4 Tablespoons Salted Butter

3 Tablespoons All-Purpose Flour

1 Small Chopped Onion; Fine Chopped

4 Cloves Garlic, Minced

2 Cups Shredded Jalapeno Jack Cheese

3 Teaspoon Worcestershire Sauce

½ Teaspoon Red Pepper Flakes

Kosher Salt And Ground Black Pepper To Taste

Directions

Step 1 Melt butter in a skillet over low heat. Add bread crumbs. Cook and stir until butter is incorporated into the bread crumbs. Remove from skillet and set aside.

Step 2 Place spinach in a microwave-safe baking dish. Add water. Cover and cook on high for 7 1/2 minutes, stirring halfway through. Drain over a measuring cup. Add enough cream to make 1/2 cup. Set aside.

Step 3 Melt butter in the skillet. Add flour and cook, stirring continuously, until mixture turns paste-like. Add onion and cook, stirring constantly until soft and translucent, 4 to 5 minutes. Add garlic and cook until fragrant, about 1 minute. Slowly add milk mixture, stirring constantly. Mix in cheese, Worcestershire sauce, red pepper flakes, salt, and pepper. Add spinach and cook until well incorporated, 4 to 6 minutes.

Step 4 Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler.

Step 5 Place spinach mixture in a large greased baking dish, top with bread crumbs, and place under the broiler until bread crumbs are golden, about 5 minutes. 6 servings

Grilled Baked Potatoes

Ingredients

5 Large Baking Potatoes, Quartered

3 Tablespoons Olive Oil

2 Teaspoons Freshly Ground Black Pepper

2 Teaspoons Garlic Powder

2 Teaspoons Dried Rosemary

Sea Salt To Taste

Directions

Step 1 Place the potatoes into a large pot with water to cover. Bring to a boil and cook over medium-high heat for about 10 minutes, or until tender.

Step 2 Preheat the grill to medium-high heat. Drain potatoes and toss with olive oil, black pepper, rosemary and salt to taste.

Step 3 Place the potatoes skin-side down over indirect heat on the grill and reserve liquid. Grill for about 15 minutes. Remove potatoes to a serving plate and sprinkle with the reserved olive oil mixture.
