Moroccan Salmon

Ingredients

2 cups sliced onions, separated into rings

1 tablespoon canola oil

4 garlic cloves, minced

2 cups chopped plum tomatoes

1/4 cup golden raisins (optional)

1/2 teaspoon sea salt

1/2 teaspoon ground cumin

1/2 teaspoon ground turmeric

1/8 teaspoon ground cinnamon

4 salmon fillets (5 ounces each)

2 cups Hot cooked couscous, optional

Directions

Preheat oven to 375°. In a large nonstick skillet, sauté onions in oil until tender, 5 minutes. Add garlic; cook 1 minute longer. Add the tomatoes, raisins and seasonings; cook and stir 5 minutes longer. Place salmon in a 13-in. x 9-in. baking dish coated with cooking spray. Top with onion mixture. Cover and bake just until fish begins to flake easily with a fork, 25-30 minutes. If desired, serve with couscous. 4 servings.
