Artichoke, Chicken and Spinach Soup
Ingredients
2 (14 ounce) can artichoke hearts, drained and chopped
1 (10 ounce) package frozen chopped spinach, thawed
4 cups of rotisserie chicken chopped
½ cup sour cream
½ cup mayonnaise
½ cup cream cheese
1 cup grated Romano cheese
1 teaspoon minced garlic
1 quart of water
1 quarts of half n half cream
Directions
In a large mixing bowl, mix together artichoke hearts, spinach, chicken, sour cream, mayonnaise, cream cheese, Romano cheese, and garlic. Place all in a large soup pot on medium high with the water. Heat until combined and bubbly. Reduce heat to medium low, add the half n half and cook until heated through and bubbly, about 25 minutes. Serve with pita or crackers. Serves 10
