Napa Cabbage Bowl


⅓ cup white wine vinegar

2 teaspoons toasted sesame oil

3 teaspoons vegetable oil

2 tablespoon rice vinegar

1 tablespoon soy sauce

1 tablespoon sugar

1 teaspoon minced fresh ginger root

¼ teaspoon kosher salt

1 small head Napa cabbage, thinly sliced

2 carrots, peeled and grated

¼ cup toasted sesame seeds

5 scallions, thinly sliced


Bring white wine vinegar to a simmer in a small saucepan over medium heat. Cook until reduced to 2 tablespoons, 4 to 6 minutes. Transfer to a large bowl and let cool completely, about 10 minutes. Whisk in sesame oil, vegetable oil, rice vinegar, soy sauce, sugar, ginger, and salt.

Add cabbage and carrots to the bowl with the dressing and toss to coat. Let stand 5 minutes. Add sesame seeds and scallions. 6 Servings. May add 1 cup chopped rotisserie chicken if protein is desired.
