Portobello Caps and Vegetables side


1 Tablespoon Olive Oil

1 Tablespoon Butter

1 Tablespoon Garlic, Peeled And Minced

1 White Onion, Diced

1 Sm. Package of Spinach

½ Teaspoon Kosher Salt

6 Large Portobello Mushroom Caps

2 Cups Mozzarella Shredded


Step 1 Heat olive oil and butter in a medium skillet over medium heat. Stir in the garlic, onion, and spinach Season with salt. Cook about 5 minutes, until vegetables are tender.

Step 2 Reduce skillet heat to low. Place mushroom caps in the skillet, cook 6 minutes on each side, then cover with the vegetables and sprinkle with cheese, and cook about 5 minutes covered, until cheese melts over the vegetables. Serves 6
