Chicken and Mushroom in Cream Sauce
Ingredients
2 Tablespoons Butter
5 Boneless, Skinless Chicken Breasts, Cubed
Kosher Salt And Freshly Ground Pepper To Taste
2 Green Zucchini, Chopped Or Spiralized
1 Small Pkg. Fresh Cremini Mushrooms, Sliced
1 Tablespoon All-Purpose Flour
2 Tablespoons Olive Oil
5 Green Onions, Chopped
1 Cup Heavy Whipping Cream
Directions
Melt butter in a skillet over medium heat and cook chicken until slightly browned, stirring frequently, 5 to 7 minutes. Season with salt and pepper and transfer to a plate. Cover with foil or a bowl to keep warm.
Heat olive oil in the same skillet over medium heat and cook green onions until soft, about 2 minutes. Add zucchini and cook until softened, about 5 minutes. Add mushrooms and stir to combine. Return chicken to the skillet and sprinkle with flour. Stir in cream and cook until sauce has thickened, 3 to 5 minutes. Serve over rice with garden salad and vinaigrette. Serves 4
