Artichoke Chicken Salad

Salad:

1 Jar Marinated Artichokes Chopped (Juice Saved)

3 Chopped Roasted Chicken Breasts

1 Celery Diced

4 Green Onions Chopped

½ Diced Red Pepper (Optional)

Dressing:

1 Cup Mayonnaise

Juice from the marinated Artichokes

Kosher Salt and Pepper

Mix and dress. Let sit in refrigerator for 2 hours. Serve with pita chips or crackers.
