Spicy Spoon Corn Bread
2 Cups Cornmeal
1 Teaspoon Salt
½ Teaspoon Baking Soda
1 Cup Cream
⅓ Cup Vegetable Oil
½ Cup Sour Cream
3 Eggs, Beaten
1 (15 Ounce) Can Cream-Style Corn
1 (4 Ounce) Can Chopped Mild Green Chiles, Drained
3 Cups Shredded Monterey Jack Cheese
Step 1 Preheat oven to 350 degrees F (175 degrees C).
Step 2 Grease a 10 inch cast iron skillet or baking dish.
Step 3 Whisk together cornmeal, salt, and baking soda in a large bowl.
Step 4 Stir in cream, sour cream, and vegetable oil until well blended.
Step 5 Beat in egg and cream-style corn until well mixed.
Step 6 Pour 2 cups Monterey Jack Cheese, Green Chilies into the batter and fold to blend. Top with remaining cheese.
Step 7 Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.
